Einkorn Ancient Grain
Why is it important to know your grain?
Today, commercial wheat is one of the main culprits for allergies, leaky gut syndrome and gluten intolerance. Wheat hybridization was created back in the 1970's to create a smaller or dwarf variety of wheat to increase greater crop yields for the world market. The wheat's genetic code was altered and became a grain that consumers could not tolerate. Gluten intolerance levels increased dramatically over the years, from 1 in 2500 to 1 in 133 today. What is Einkorn?
Einkorn is the original “staff-of-life” grain, known as the oldest variety of wheat, which dates back to the beginning of time. Einkorn is the oldest wheat known to scientists, and is considered man’s first wheat. Einkorn (Triticum monococcum) is a non-GMO grain and believed to be one of grains mentioned in the bible. It was known as ‘shippon’ in Hebrew. This grain is nutrient rich, providing high protein, fiber and minerals. It has been around for thousands of years. In fact, a 14,000-year-old piece of einkorn bread was recently found in Jordan around an ancient fireplace—people have known about the benefits of einkorn for thousands of years! As the research team analyzed the crumbs further, they found out that the Natufians (a hunter-gatherer tribe of the time) were sophisticated cooks. Their flour was made from two different types of ingredients — wild wheat called einkorn and the roots of club-rush tubers, a type of a flowering plant. Fascinating find! Young Living grows our own organic Einkorn grain too! The term einkorn is derived from the German language and interpreted to mean “single grain”. Einkorn is the most primitive form of wheat on Earth. It contains only 14 chromosomes, whereas modern wheat contains 42 chromosomes. Einkorn does not have the D chromosome, which seems to be connected with wheat intolerance in many humans. Einkorn is easier to digest and contains more protein and anti-oxidants than modern wheat. |

Inflammation is triggered by a number of certain foods and gluten found highest in wheat, is one of these major culprits. Health benefits of this ancient flour
Einkorn is a much healthier grain. Einkorn is nutrient -dense, with a high content of protein (higher in protein than hard red spring wheat), phosphorous, vitamin B6 and potassium when compared to modern forms of wheat. It has high amounts of carotenoids – the natural red, yellow or orange pigments that are found in many vegetables and fruits, and in a few grains. Einkorn contains 3 to 4 times more beta-carotene than modern wheats (which helps to boost immunity, helps to prevent cancer and heart disease). It also contains 3 to 4 times more lutein than modern wheats (prevention of macular degenration and cataracts).
- Einkorn’s natural genetic code and low gluten levels make it a superior choice because of the compatibility with the human body when compared to the modern hybrid wheat of today.
- Einkorn grain is easier to digest, so nutrients are better absorbed.

- Dr. Mark Hyman writes about Dr. Fasano's research, a celiac expert from the University of Maryland School of Medicine. Dr. Fasano discovered a protein made in the intestinal tract , called 'zonulin', that is increased by exposure to gluten. He found that the Zonulin breaks up the tight junctions or cement between the intestinal cells that nromally protect your immune system from bugs and foreign protein in food leaking across the intestinal barrier. This leads to 'leaky gut' syndrome, which causes inflammation throughout your whole body and a list of many other diseases. ( 'Essential Oils Desk Reference ' book - seventh edition)
- Carol Kenny, PhD states that “Einkorn is nutrient dense, with protein content equaling durum wheat and some 35-50% higher than hard red wheat.”
